Because the base has no seam.

The entire container is cut and folded from one sheet of paperboard, and the bottom is formed by interlocking folds rather than a glued join. On a conventional carton there is always a glue line somewhere along the base, and under hot oily sauce that line is where liquid finds its way out.

Add a poly-coated interior — often a double coating for wet dishes — and you have a container that holds sauce reliably. It is not accidental: the format was originally designed to carry oysters in brine, which is a harder liquid problem than most takeout.

The limit is orientation. A tuck top is not an airtight seal, so the box holds contents securely upright but should not be carried on its side.

Sizes follow liquid measure, and most menus are covered by three:

• 16 oz (pint) — steamed rice, single portions, side dishes. The highest-volume size in most kitchens.
• 26 oz — standard entrées, noodles and mixed dishes.
• 32 oz (quart) — family-style portions and heavy wet stir-fries.

Mini pails are useful for sauces and condiments if you would otherwise use plastic pots.

The practical planning question is your combo structure. If a standard order is one rice plus one entrée, you will burn through 16 oz and 26 oz at roughly the same rate — worth knowing before you set order quantities.

Only with the handle removed — and it is worth printing that on the box, because most people do not think about it.

The wire bail is metal, so it cannot go in a microwave. It lifts out easily once the customer knows to do it.

With the wire off, a poly-coated pail reheats reasonably at moderate power. Open the tuck top first, or steam builds inside.

If reheating is a normal part of how your customers use your food, two things help: print the instruction inside the lid, and consider a PLA-lined board, which some operators prefer for reheating. Either way we would recommend telling the customer explicitly rather than relying on them working it out.
