Rigidity, and it comes almost entirely from the rim.
A boat is a shallow folded blank with flared sides and no stiffened edge. It is cheap, it nests beautifully, and it flexes when you carry it loaded — which is fine for a small portion of fries and poor for anything bigger.
A tray has proper walls and a formed rim, rolled or folded. That rim acts as a beam along the edge, so the tray stays flat when picked up by one side with a full portion on it.
The difference grows with size. On a small snack portion you would not notice. On anything approaching a meal, an unstiffened blank bows across the middle and the food slides toward the crease.
Choose a boat for small snack portions and lowest cost, a tray for anything meal-sized or carried any distance.
