Because a fogged clear lid is functionally an opaque one, and sushi sells on being seen.

Chilled sushi taken into a warmer room produces condensation on the inside of the lid. Untreated, that moisture beads into droplets that scatter light, and within a few minutes the customer cannot see the product at all.

An anti-fog treatment changes the surface tension so the water spreads into a thin, even, effectively invisible film instead of forming droplets. The same amount of moisture is present — it just stops obscuring the view.

It matters most for chilled retail packs sitting in a cabinet competing with everything beside them. For made-to-order takeaway opened within the hour it matters less, though it still looks better on arrival.

It looks like presentation, but it is really about protecting the rice.

Wasabi and ginger are both wet. Placed directly against sushi rice, their moisture migrates into it — the rice softens, the seasoning balance drifts, and the whole pack tastes off. Over the hours a chilled pack sits in a cabinet, that is a meaningful quality loss.

Separate wells keep the moisture where it belongs. Soy should have its own vessel too, either a sachet or a sealed compartment, never loose in the tray.

The secondary benefit is genuine presentation: compartmented packs look considered, which supports a higher price point.
